Our house smells yummy. After our dinner yesterday of garlic roasted chicken, almond & garlic green beans, and shell maca (shells & cheese) the whole place smelled a bit of garlic. But last night I stuck the carcass with some wilted celery, carrots, & onion in a pot to simmer it. My goal is to make chicken stock but its looking more like a broth.......and I know the difference know cause I read it online! Either way, it smells yummy in here! Depending on how this chicken stock/broth turns out, I will use some of it today for chicken soup and freeze any if there is any left.
Well, this week is starting week 5 of me trying to be healthier and lose a few pounds in the process. I'm doing the simple things, but my goodness they are difficult to stick to! The hardest one by far is the 'not eating after 8pm.' Ugh. I have been working out almost daily--I usually give myself 1 or 2 days off a week. My workouts vary but pretty much everyday I use my Mom's glider (pictured below) and use the Wii Fit (which I adore). Then other days I use 5lb weights and also do crunches. But I think I have come to a point where I am stuck. You see, I have this magic number in my head and I can't reach it yet. This past semester I gained some extra baggage--about 6 pounds extra weight--eating junk food, staying up too late, getting home too late and eating dinner at 10pm all caught up with me, dammit. Before that, I was always around 142 which I always felt was fine. I'm 5'7" and I had 3 kids in less than 5 years (2002, 2003, & 2006)--who would fault me for my weight after that? It was only after feeling so damn gross and tired that I decided to do something about it. (And Jennifer, you are doing so great that you kind of inspired me to try!) So now here I sit, stuck at 142lbs. Can't get below it. And yes, I am super happy that I have lost those extra pounds. I suppose that means I have to kick up my work outs into a higher gear. But all in all, I FEEL much better than before. So I will continue on my mission.................


Ah, the rain has begun. Going to go watch Aaron play the Wii Fit.
